What pH should I keep my plaster pool at?

Keep your pH between 7.4 and 7.6. That’s the sweet spot — too low etches the plaster, too high causes scaling. Balance alkalinity first at 80–120 ppm, then adjust pH. Test calcium hardness at 200–400 ppm to protect the plaster.
