Should I coil an extension cord while it's under load?

No, coiling an extension cord while it’s drawing current can cause dangerous overheating. Heat builds up in the center of the coil because air can’t circulate, turning trapped heat into a fire risk. Unspool the whole cord, or at least leave loops loosely draped. Even a cord reel with a thermal switch shouldn’t be fully reeled in while running.
