6 Tips for Pan-Seared Tuna Steak Timing

  1. Rare: 30–45 seconds per side For a 1-inch steak in a screaming hot, well-oiled pan, 30 seconds gives a crisp crust and cool, translucent center. Go 45 seconds for a slightly thicker sear.

  2. Medium-rare: 1 minute per side This is the sweet spot for most people. You get a warm, pink center that stays tender.

  3. Medium: 1.5 to 2 minutes per side At 90 seconds, about a third of the steak cooks through. At 2 minutes, it’s closer to well-done—fine if you like canned tuna texture, but not recommended.

  4. Dry the fish first Pat it with paper towels, salt generously, and let it sit for 5 minutes. Wet tuna steams instead of searing, ruining the crust.

  5. Adjust for thickness For a ¾-inch steak, knock 10 seconds off each side. For 1.5 inches, add 15–20 seconds.
