Never use counter, warm water, or microwave Rushing the thaw on the counter or in warm water turns tuna mushy and risks bacteria. The microwave cooks edges while leaving the center raw.
Pat dry before cooking Blot the thawed tuna dry with paper towels. This ensures a proper sear and keeps the texture like fresh.
