The performance gain comes from running two 64-bit memory buses simultaneously instead of one. With typical DDR4-3200, read speeds jump from about 20GB/s to 38-40GB/s.
The bandwidth difference is almost entirely about channel count, not capacity. A 16GB single-channel kit scores about the same as an 8GB single-channel kit in these benchmarks.
