3 Rules for Packing Hot Food in a Cooler

  1. Never put hot food directly into a cooler Hot food raises the internal temperature of the cooler into the 40–140°F danger zone, where bacteria multiply rapidly. It also melts ice quickly, leaving food sitting in lukewarm water.

  2. Cool food to under 100°F before packing Use a shallow pan in the fridge or an ice bath to bring the temperature down first. This takes about 20 minutes but prevents spoilage.

  3. Transfer cooled food to the cooler only after it’s safe Once food is below 100°F, pack it in the cooler with plenty of ice. This keeps everything cold and safe for your trip.
